Shrikhand

 Curd is the key ingredient of this shrikhand recipe.

Ingredient

Pour the plain curd onto the cloth. Gather the edges of the cloth and tie them together. Put a heavy weight over the cloth and let it sit for 2 hrs.

Step 1

This way all the excess liquid will drain out from the curd. The end result will be thick soft cheese like hung curd.

Step 2

Add powdered sugar, saffron, and cardamom to hung curd. 

Step 3

Gently fold the sugar and cardamom into the hing curd until well incorporated. Do not whisk for too long.

Step 4

Serve Shrikhand chilled!
