Mushroom Pulao

You need mushrooms, basmati rice, onion, green peas, and few other pantry staples for this pulao.

Ingredients

I use button mushrooms. You can use – crimini, portobello, shiitake, gucchi, or any other  variety of meaty mushrooms for making pulao.

Heat ghee. Add whole spices, cashew, onion, and saute till onion caramelize.

Step 1

Add ginger garlic paste, mushroom, salt, spices, and green peas. Saute for 1 - 2 minutes. 

Step 2

Mushroom should become nicely caramelised before adding rice.  

Step 3

Add soaked basmati rice. Do not add water at this stage.

Step 4

After adding soaked rice saute pulao for 1 - 2 minutes.

Step 5

Add water, stir to combine, and pressure cook for 3 minutes or 2 whistles.

Step 6

Let the steam release naturally. Fluff the pulao using fork.
