Make a fine paste of tomato, garlic, ginger, and Kashmiri dry red chilies.

Heat oil. Once it’s smoking hot, add onion and fry till they are golden brown.

Grind fried onion to a smooth paste without using water

In the same kadhai, add bay leaf, cinnamon, tomato paste, turmeric, red chili powder, coriander powder and fry

Add the chicken pieces, season with salt, and fry till they become white.

Next, add fried onion paste. Mix. Cover and cook the chicken till its juices are released.

Add 1 Cup of water to make gravy along with garam masala, dry fenugreek leaves, fresh coriander, and  green chili.

Step 7

Serve Chicken Curry with basmati rice or roti.
