Week 2 – Lunch Box Menu Plan
Monday: A hearty and fulfilling vegetarian lunch box to deal with Monday blues.
Mix Vegetable Sabzi (Main Course), Paratha (Side Dish), Medu Vada (Snack), Coconut Chutney (Snack)
Meal Prep Tips: Prepare medu vada batter, make a batch of coconut chutney, and paratha dough over the weekend. In fact, you can use the paratha dough for the next 2 days. Chop vegetables. Store them in the refrigerator. You can use good quality, packaged medu vada batter as well.
Tuesday: A fusion lunch bo packed with fiber and flavors.
Pumpkin Sabzi (Main Course), Paratha (Side Dish), Lentil Salad & Dressing (Snack), Energy Bar or Granola Bar (Sweet)
Meal Prep Tips: I boil lentils for the salad a day before and store them in the refrigerator. Chop vegetables including pumpkin. Prepare the dressing for the salad and paratha dough. Finish all the prep work for the lunch box a day in advance and store it in the refrigerator.
Wednesday: A winter season special lunch box menu plan.
Matar Ghugni (Main Course), Dal Paratha (Side Dish), Roasted Foxnut (Snack), Carrot (Snack), Masala Buttermilk (Beverage), Grapes (Sweet)
Meal Prep Tips: I use leftover yellow dal to make the Punjabi-style dal paratha dough. Wash and store grapes so that you can pack them straightway for the lunchbox in the morning. Chop vegetables.
Thursday: A colorful lunch box
Red Sauce Spaghetti (Main Course), Whole Wheat Cake (Sweet), Strawberry (Snack), Veggies (Snack)
Meal Prep Tips: Boil spaghetti and store it in the refrigerator. You can use readymade, good-quality paste sauce or use my freezer-friendly homemade tomato pasta sauce recipe. I usually bake cakes and muffins over the weekend to pack them for lunch boxes throughout the week.
Friday: It’s Friday favorite lunch box
Palak Paneer Bhurji (Main Course), Paratha (Side), Macaroni Salad (Snack), and Peanut Chikki (Sweet)
Meal Prep Tips: Boil pasta and store in the refrigerator. In fact, the cold pasta makes a real difference to the macaroni salad. Chop vegetables. Grate paneer. Prepare dough for paratha. Store all these prepped ingredients in the refrigerator.
