Palak Khichdi

Apart from fresh spinach leaves, white short grain rice and yellow moong are the main ingredients of this khichdi recipe. 

Ingredient

The perfect blanching of the spinach leaves gives khichdi its bright green colour.

Step 1

Make a smooth puree of blanched spinach, green chilli, ginger, and garlic using one to two tablespoons of water.

Step 2

Pressure Cook rice and dal with salt, asafoetida, cinnamon , and water for 2 whistles. Open lid and add spinach paste. 

Step 3

Add spinach puree, and stir to combine. Simmer khichdi over low heat.

Step 4

Tadka

For tadka, heat ghee, add all ingredients. Fry over low heat till garlic turn light golden. Pour over khichdi.

Step 5

Palak Khichdi is ready to serve!
