Dahi Bhalla Chaat

Skinned black gram (dhuli urad dal) is the key ingredient to make dahi vada. 

Ingredient

Rinse and soak urad dal for 5 - 6 hours or overnight to make dai vada. 

Step 1

Drain all the water. Grind dal with green chili, ginger using not more than 1/8 cup of water. 

Step 2

Add salt, asafoetida, turmeric, and whisk batter briskly for 8 – 10 minutes or till it is light and fluffy.

Step 3

Heat oil in a pan for deep frying. Drop a big tablespoon of vada batter into the hot oil. 

Step 4

Fry vada over low heat till crisp and golden from outside and fully cooked from inside. 

Step 5

Take 4 cups of lukewarm water in a saucepan. Add salt and asafoetida. Add the fried vada into the lukewarm water.

Step 6

After 10 minutes gently squeeze out all the excess water from each vada using  your fingers. 

Step 7

To make dahi bhalla chaat, arrange soft vada in a platter. 

Step 8

Add sweet curd, green chutney, sweet chutney and masala on top of vada. 

Step 9

Enjoy Dahi Bhalla Chaat chilled
