Make sure all the ingredients are at room temperature before preparing the pancake batter.

Combine vinegar in milk. Mix. Set aside for 10 minutes. You will get buttermilk for making cake batter.

Sift together flour, baking powder, soda, salt, brown sugar in a mixing bowl. Mix nicely.

Whisk together in a separate bowl egg, buttermilk, olive oil and vanilla essence for 5 minutes.

Make well in the centre of the flour mixture, add the liquid ingredients. Let the flour soak in liquid for a few seconds.

Gently fold the batter. No streaks of flour should remain in the batter. Let it rest for 5 – 10 minutes.

Heat non stick pancake pan over medium heat. Grease it with a teaspoon of butter.

Pour a large spoonful or one scoop of pancake batter in the pan. Gently spread it.

Do not flip the pancake until tiny air pockets appear on the surface.

Flip and cook the pancakes from the other side. Do not press too hard while cooking.
