You need a few basic spices, salt, vinegar, and mustard oil to make this pickle.

Ingredient

Fresh cauliflower, red carrot, turnip, ginger, lime, and green chilli are the main ingredients.

Vegetables

Boil water in a deep sauceppan, add turmeric and salt to the boiling water.

Step 1

Blanch vegetables in hot water for 3 minutes. Turn off the heat. Do Not overcook the vegetables.

Step 2

Transfer blanched vegetables to a colander to drain excess water.

Step 3

Spread all the blanched vegetables on a large baking sheet lined with a muslin cloth. Sundry or air dry the vegetables.

Step 4

Heat mustard oil. Once the oil starts fuming, turn off the heat. Add asafoetida, fennel, and nigella seeds. Allow the oil to cool down.

Step 5

Combine dehydrated vegetables, ginger, green chili,  lemon, crushed mustard seeds, salt, pickle masala, and mix nicely.

Step 6

Pour tempered mustard oil, white vinegar, and mix the pickle using a spoon.

Step 7

Store gobhi gajar ka achar in a clean and dry sterlized jar with the lid.
