Medu Vada

Skinned black gram (dhuli urad dal) is the key ingredient to make medu vada. 

Ingredient

Rinse and soak urad dal for 5 - 6 hours or overnight to make medu vada. 

Step 1

DO NOT add too much water while grinding soaked dal. Add only 1 tablespoon at a time. 

EXPERT TIP

After grinding without adding salt whisk the batter for 10 minutes or till it is light, airy, and fluffy.

Step 2

Add onion, ginger, pepper, spices, and salt to the dal paste. Whisk to combine evenly. 

Step 3

Always wet your fingers with water before shaping the vada, or you can use banana leaf. 

Step 4

Fry medu vada at medium-high heat so that it gets perfectly cooked from the inside and crisp from the outside.
