Semolina (rava) gives a nice texture and taste to the modak.

EXPERT TIP 1

Keep frying the khoya till the fat starts oozing from the sides.

EXPERT TIP 2

Pinch a small portion of khova and test it by forming a ball.

Do not add sugar in the hot khoya mixture. It should be lukewarm to touch

Form a smooth, soft, non stick dough for making modak.

Shape modak using a mould or your fingers.
